I'm mounting my first HDU signs to uneven brick
surface. The signs are 14"x30" can someone please
help me understand the best way to mount.

It may not be the best way, but I'll let you know our way.

We back the HDU with either Medium Density Overlay or DiBond with threaded studs epoxied to the backing. Holes are drilled in the backing and quarter inch bolts (about 3" long) are placed through the holes - bolt heads are between the backing and the HDU. Shallow holes are drilled into the back of the HDU to accomodate the heads of the bolts.

The backing is attached to the HDU with epoxy (we use West System) and a cardboard pattern is made of the bolt pattern.

To install, we put the pattern on the wall, level, and drill holes in the brick for the bolts. Silicone is squeezed into the holes and applied to the bolts - then the sign is pushed flat against the wall. Friction holds the sign in place until the adhesive sets up.

No hardware shows from the front.
