if you seal it it would be fine. but you can get non formaldehyde mdf it only costs a bit more. or wheatboard or such too.

Medex is another option for formaldehyde/allergen free material. If you use plywood, check out Columbia Forest Products "Pure Bond"

You can also get Trupan ultralight up to 50mm (2") thick...

The last time i checked for trupan it was almost double the cost of mdf ($38.00/sheet)and closest was 180 miles away roundtrip. With gas it would average over $50.00/sheet, too much for me to justify unless it was local.

I Pay $23 a sheet for Trupan.. Check your suppliers
Also.. With the outgassing I had a customer ask me this so I spent 2 days researching Material safety data sheets and found nothing on this.
If it actually emitted gasses wouldnt it make a balloon if you painted with latex paint?

I do not know about the USA but I believe that it is similar to Australia. Our locally manufactured MDF is rated E0 which means that it does not emit any toxic fumes. Years ago it used to but not anymore. The MDF imported from South America and Asia is not rated EO.
Ask your supplier for a material data sheet it will have all the info you need.
