It depends on the style of the sign and the size of the letters. I use sharp angle bits for small text and shallow angle for large text especially if they are gold.
The font needs to fit the spirit of the sign. v carve up some scrap and see what you like.
Brain could you give me some examples.. of fonts, size, and bits...
would greatly appreciate it... have several request and I want to do good work.

Here are 2 of students favorite fonts for v carving : Haettenschweiler for block type and monotype corsiva for script. One thing that I have found out is that you need to add spaces between the letters to make it work on almost any font that I have used in v carve. We use a 1/4" 60^ v bit on the block font and 1/4 90^ on the script font
