2 sided hanging sign

What is the best way/material to use for a hanging 2 sided sign? It will be over the entry door to a business. Signs are not my thing but this is for a building we may buy for my wife's store and my shop. I am guessing 3 layers would be best with a different colored center panel and cut the lettering through the outer layers?? Wind will be an issue.

The sandwich method is the way to go. Even if you glue up a 2 ply with no color change, it will save a mess of trouble.
