Should I Z-Zero between every cut even if the material and tool have not changed? In other words - I cut a sign from a standard blank, remove it, then cut another sign from the same size blank and so on.

If the material thickness has not changed, there is no reason to rezero.

Thanks Gary:D Don't you ever sleep? lol. I was thinking yesterday that we should set up a VoIP group for people to chat on - we are all in our shops with our computers anyway - would be helpful to us newbies for sure.

Just as an FYI, there's one special case that requires extra re-zeroing. If you have a vacuum table setup for holddown, the spoilboard gets thinner as the vacuum sucks the moisture out of it. It seems to pretty much stabilize after an hour or so, but usually requires at least one rezero and maybe more if the parts you're cutting are depth critical.
