A guy gave this to me, it is 12"x24"x1" and has nice grain patterns but it also looks like it might have some (quilting?) and besides a tray I can't think of what i could make with this?
I don't think i want to make a carving but something that makes the wood and the pattern the feature...maybe a box lid?

Looks like a black walnut cross section. Hopefully it doesn't crack from the pith. Is it still green Jack?

Been air dried for long time when given to me. A friend has a moisture meter i'm going to have to go get from her to check the moisture content.

Sure looks like walnut. But the growth rings tells us on one side of the pith is under compression and the other side is under tension. Be sure to do a half dozen moisture readings. Good luck. If it does crack, place a couple of contrasting butterflies across the crack[s].

Has it been stored indoors for a while?

In my climate, 11-12% is pretty typical of wood air dried outdoors for 1-2 years with 14% being the high side. Still numbers that are too high for most regions. I work almost exclusively with kiln dried wood, so these numbers are based on what I have observed on a few occasions.

If it has been stored indoors for a couple of heating seasons then it may be closer to ideal but then I would expect to see some cracks if that were the case.
