I have never done it and wondered if it can be done without tearing everything up? I was going to buy a piece for a countertop and cut out a sinkhole. How do you treat the inside cuts for an undermount sink?

Forget it Jack. Wrong machine, wrong tooling.
Needs to be done with very expensive diamond bits and constant water.

I agree with Dave, Jack.
Granite is roughly a 7 on the Moh's hardness scale and I only use diamond wheels or sintered diamond cutters in the Foredom at that hardness with continuous water on the cutter.
I've cut Slate when there were no harder inclusions, but unless I can scratch it with a US penny, I'd give the stone a pass.

Marble yes, granite no.

Diamond tipped hole saw - Might go into sticker shock depending on the size/brand.

Simple holes are no problem, but if you want any kind of shaping other than a hole, specialized tooling is required.
